
About a month ago I was really craving Chinese food…but more specifically egg rolls. Now, at the time of this craving I was just ending my 90 days of Whole 30 and was getting tired of cooking the same recipes over and over again. My Husband, Ryan, being the creative cook that he is decided to get on his computer to do some research. Ryan looked up recipes on egg rolls, recipes on egg rolls wrapped in lettuce, egg rolls eaten out of a bowl and from that research and many different nights of testing (which I happily volunteered for) he came up with his own take on an Egg Roll in a Bowl that is Whole 30! This dish is so tasty that when we took it over to my Sister’s house, she requested that Ryan make enough for her to meal prep for the rest of the week, which he did gladly! As an added bonus, we discovered Tessemae’s Habanero Ranch which you can drizzle over the top; Ryan’s new favorite, incidentally. I hope you enjoy this recipe; I know I do! Thank you, Ryan!

Whole 30: Egg Roll in a Bowl
Servings: 2½ Servings
Time: Prep – 15 minutes | Cooking – 20 Minutes
Ingredients:
- 2 Tablespoons Roasted Sesame Seed Oil (Trader Joe’s)
- ¼ Cup Coconut Aminos
- 1/3 Cup Minced Garlic
- 6-8 Green Onions sliced and separated by Whites and Greens
- ½ Cup of Diced Red Onions
- 1 Tablespoon Ground Ginger
- 1 Tablespoon Garlic Powder
- 1 Tablespoon of Red Wine Vinegar
- 1 lb of Ground Pork
- 14 oz. Bag of Coleslaw or Cabbage Mix
- 1 Tablespoon Harissa Pepper Sauce (Trader Joe’s) or Hot Sauce of your choosing
- Tessamae’s Habañero Ranch (Drizzle)
- Sesame Seeds (Garnish)
Directions:
- Place Roasted Sesame Seed Oil in a Saucepan or Skillet
- Set Heat to Medium and pour in diced Red Onions and Green Onions (Save green stalks from the green onion for garnish later)
- As Onions soften, after 4 minutes add Minced Garlic and stir contents to mix, this will prevent the minced garlic from overcooking and burning
- Add Ground Pork and stir into the pan, allowing the meat to cook
- As the meat cooks, add ground ginger, garlic powder, hot sauce
- Once the meat browns, add Coleslaw or Cabbage Mix and stir into the cooked meat
- Add Coconut Aminos and Red Wine Vinegar while stirring
- Salt and Pepper to taste
- Set heat to low and let simmer; continue to stir as you serve to even the flavor
- Garnish with: Sesame Seeds, Everything But the Bagel, Tessamae’s Habañero Ranch, Diced Green Onions – your choice
Extras:
- Additional Option: Serve over Cauliflower Rice
- Additional Option: Powder the Ground Pork evenly in Arrowroot Starch before placing in the pan; this will allow the juices and sauce to thicken slightly as you complete the recipe.
