Sweet Potato Whole 30 Egg Bites Recipe

This sweet potato Whole 30 egg bites recipe is a great one for all those people on the go in the mornings. When I was working full-time and had a long commute every morning, I would make a batch of egg bites every Sunday and eat them in the morning the next couple days.

What I absolutely love about this recipe is how yummy it is whether you eat it fresh, or a couple days later when you re-heat it in the microwave. Whole 30 egg bites are such a great staple to have in your weekly menu; especially if you are focused on a paleo and more whole foods eating lifestyle.

This recipe calls for sweet potatoes as the base for the Whole 30 eggs bites and requires that you shred and bake the sweet potatoes first prior to putting the eggs inside.

If you are looking to hit the ground running with Whole 30, then I highly recommend this 30-day guide. Not only does it give a quick run-down of what the program is, it gives some great recipes to start your program off with.

After I did my first round of Whole 30, I wanted to incorporate more healthy and delicious recipes into my family’s weekly menu. This book was a go-to when it came to selecting what my family and I ate during the week and on the weekends.

Whole 30: Food Freedom Forever

If you are a reader like me and want to learn everything about a program prior to doing it, I highly recommend starting off with this book. I actually completed my first round of Whole 30, without reading this book. However, a couple years later, when I found out I had Hashimoto’s Disease, I decided to deep dive into the intricacies of the program to how see and realize the benefits. This book really broke it down for me and allowed me to learn about ALL the benefits of this elimination diet and ultimately, turn my health around.

Once you’ve learned the fundamentals and completed a round of Whole 30, you’ll notice that it becomes easier to understand and know what to look for when planning for meals.

How to make the Sweet Potato Whole 30 Egg Bites Recipe

What you will need for this recipe is sweet potatoes, coconut oil, salt & pepper, Italian seasonings, avocado and of course, eggs! You will also need a potato shredder and a muffin tin.

Step 1

Preheat your oven to 400 degrees and grease the muffin tin with coconut oil. (Note, I like to use coconut oil versus any other oil for sweet potatoes because they add to the sweetness).

Step 2

Shred both the sweet potatoes and toss with melted coconut oil, salt, pepper and Italian seasonings.

Step 3

Divide the potato mixture evenly to all the muffin tins and press down with a spoon or your fingers making a small little nest. Try to make sure there are no gaps in the nest. Place in pre-heated oven for 10 minutes.

Step 4

Once the sweet potato nests are baked, pull out and add cubes of avocado to each nest. I normally can use one avocado for an entire sheet, but if you like avocado you can always add more.

Step 5

Crack one egg into each nest over the avocado. Sprinkle with salt and pepper and put back into oven and bake for 10-12 minutes. Once baked (make sure the egg whites are not jiggly) – let cool for 5-10 minutes and ENJOY!

Tools you will need for the Sweet Potato Whole 30 Eggs Bites:

Muffin Pan

In order to make these Whole 30 egg bites and really any egg bites in general, you will need a muffin pan. I LOVE my muffin pan and I used it all the time for breakfast, kids snacks, cupcakes and so much more. Check out the muffin pan that I use here.

Potato Shredder

The last tool you will need for this recipe is a potato shredder. If you already have a cheese grater, that will work as well. I do like to save time with a potato shredder machine like this one.

Ingredients
