Easy Cilantro Lime Cauliflower Rice Recipe {Whole 30, Paleo}

This cilantro lime cauliflower rice recipe will easily become a staple to your weekly meals at home. I am someone who is obsessed with Chipotle’s Cilantro Lime Rice and when I am eating paleo or Whole 30, I truly miss it. I was thrilled when Chipotle started offering their lifestyle bowls and gave options for Whole 30, keto, paleo, vegan and vegetarian.

At home, I do like to recreate my favorite bowls with my easy cilantro lime cauliflower rice recipe. It not only is super easy and delicious, it is also great to meal prep with and have for the next couple days as side dishes. One of the keys to making this cilantro cauliflower rice flavorful is by adding a Whole 30 compliant bone broth to the dish. Not only does it add flavor to the dish, it also adds the health benefits of bone broth to it.

How to make Cilantro Lime Cauliflower Rice

What you will need for this recipe is a frozen bag of cauliflower, Whole 30 compliant bone broth , olive oil, limes, cilantro, salt, pepper, white onion and garlic. If you want to add some garnish like I did in the photos you can add additional limes and cilantro topped on the rice.

Step 1

Add oil to your skillet and saute the garlic and onions until onions are translucent.

Step 2

After onion and garlic is cooked, add in the bag of frozen cauliflower and cook for 5 minutes – stirring occasionally to ensure that it doesn’t burn.

Step 3

Stir in the bone broth and raise temperature to high. Once the broth is mixed in add the lime juice and half of your cilantro. Mix in. Cook for another minute or two.

Step 4

Add salt and pepper and mix. Place in a serving bowl and add remaining cilantro and lime as a garnish. ENJOY!

Ingredients

  • 1 bag of frozen cauliflower rice

  • 2 tbsp of Whole 30 compliant bone broth

  • 1 tbsp olive oil

  • 2 limes juiced (additional for garnish optional)

  • 1 bunch of cilantro (additional for garnish optional)

  • 1/2 tsp salt

  • 1 tsp pepper

  • 1/2 white onion chopped

  • 2 garlic cloves

Directions

  • Add oil to skillet and saute onion and garlic until onion is transparent
