This week, I wanted to continue my “Treat Yourself” series with sharing a yummy smoothie recipe created by my Mom and I, that is not only delicious BUT it is also low carb!! While following a low-carb diet, one of the things that I miss (besides BREAD) is a good smoothie in the morning or after lunch. When I mentioned it to my Mom, she too was also craving a smoothie and also wanted to have something to take with her daily dose of collagen (another great thing to add to your daily intake… and it makes you feel fantastic). So, we both spent an afternoon and became smoothie scientists and went to testing smoothies. After perfecting the recipe (our opinion) I am so excited to be sharing it with you all. This is the recipe for a green smoothie, which we think is not only delicious BUT made us both feel fantastic, giving us so much energy that lasted the remainder of the day. It is also filled with vitamins and really filling. We also, left out the collagen and replaced the stevia with a banana and made my Son his own little smoothie… and since kids will tell you the truth when it comes to taste, I thought he would be a good tester. Well, he sucked the entire smoothie down and THEN tried to grab a sip of mine. So, without further adieu, please allow me to introduce The Luv Ashland Power Green Smoothie! Enjoy!!

Ingredients:
- 2 large handfuls of power greens (baby chard, kale and spinach) we used the Earthbound brand.
- 1 full large avocado
- 1 cup of Silk Almond Coconut Unsweetened Milk
- 1 tsp of cinnamon
- 4 tbsp of collagen (we used Great Lakes Gelatin Collagen Hydrolysate)
- Juice of ½ a lemon
- 8 drops of stevia
- 1 tbsp of organic coconut oil
- 1 cup of ice
Equipment: Ninja Blender
Directions:
- Place all ingredients in blender (we used our Ninja) and blend.
- Pour into two glasses and enjoy!
