This quick and easy prosciutto egg cups Whole30 recipe are a delicious way to start your morning. Not only are these egg bites super yummy they are also Whole 30 and Paleo! The first time that I followed the Whole 30 program I was working full-time, and my number one worry was completing the program; mainly because of how busy I was as a working professional.

What ended up working for me and ultimately helped me in completing two successful Whole 30 programs was meal prep and creating and finding recipes that were made for people on the go.

My number one favorite Whole 30 recipe that I swear by is this prosciutto egg cups Whole30 recipe. If you have been following my social media channels you should already know about these cups; I have made them a few times to show my readers how easy they are to make.

Egg bites are very popular in my home and I often switch between these bites and my sweet potato whole 30 egg bites.

What I also love about this recipe is that you can eat the eggs fresh, almost immediately and then save the rest for the next week in a Tupperware. You also can take these on the go and heat them at work or eat them in the car. They literally are my Whole 30 staple and I am so excited to be sharing it with you today!

In order to make these Whole 30 egg bites and really any egg bites in general, you will need a muffin pan. I LOVE my muffin pan and I used it all the time for breakfast, kids snacks, cupcakes and so much more. Check out the muffin pan that I use here.

Glass Tupperware for Storage and Meal Prep

This technically is not a necessary tool for these prosciutto egg cups, but for the sake of meal prep and storage it is great to have on hand for this recipe. Meal prepping was what led to my success with Whole 30, so I highly recommend glass meal prep containers. Check them out here.

How to make this Prosciutto Egg Cups Whole30 Recipe

What you will need for this recipe is eggs, prosciutto (make sure it is Whole 30 approved), coconut oil, avocado, cayenne pepper(optional), salt & pepper and a muffin tin.

Step 1

Preheat your oven to 350 degrees and grease the muffin tin with coconut oil. This is an important step not to forget because your prosciutto will stick to the pan if you don’t.

Step 2

Cut or rip the prosciutto apart in pieces and place it at the bottom of each muffin tin. You do not need to fill the entire muffin tin, just enough to give it shape.

Step 3

Cut the avocado into small cubes and place a couple bits down in each muffin tin.

Step 4

Crack one egg into each muffin tin over the avocado and prosciutto and season with salt & pepper and cayenne (ONLY If you want it spicy).

Step 5

Bake in the oven for 20 minutes. Once completed check eggs and make sure that all the white of the egg is cooked through. Depending on your stove, you may need to cook longer. Let the eggs cool for about 5-10 minutes and ENJOY!

Tips for making the Prosciutto Egg Cups Whole30 Recipe!

  • When you are cutting the prosciutto do not worry about being perfect. Just shred into pieces enough to fill each muffin tin. Remember when they bake it will crisp up into a small little prosciutto egg cups.
  • If you love avocado, I recommend using two. Sometimes depending on the size of my avocado it will not fill all the muffin tin cups. I normally can make one large avocado work for the entire muffin tin, but if you want to be safe buy two and use as much as you like. Just remember that you need to fill one whole egg into the cup with the prosciutto and the avocado.
  • When the eggs are done cooking and cooled enough to enjoy, you are able to easily pull the egg cups out with a butter knife. Simply trace the butter knife around each egg bite and pop them out into the Tupperware or serving plate.
  • When choosing your prosciutto make sure you check the ingredients on the package. I normally purchase my prosciutto from my local Aldi’s but there is also Whole 30 approved prosciutto at Sams Club, Trader Joes and Costco! For an entire list of Whole 30 approved ingredients, check it out here.

How to reheat these egg bites

You are able to bake them again on a parchment lined baking sheet on 300 degrees for 5 minutes. What I normally do is place them in the microwave under a damp paper towel for 1-2 minutes. If you do chose to microwave them, keep an eye on how long you cook it, you do not want your egg to get to hot and pop! (Yes, this has happened to me and it was a mess! Multi-tasking MOM here!)
