I love this particular time of year; mainly because of how it makes you feel. Good family, friends, décor, lights and especially the GOOD FOOD! We go from Thanksgiving straight into a month of eating yummy comfort food all month long! After Thanksgiving, my husband decided to try something different by taking our leftovers and making them something just as, or even yummier than, the holiday meal that they came from! This consisted of reimagining the food into waffles! A waffle that would make Leslie Knope herself proud!
He decided to do two different waffles, with two different leftover dishes. One of them being leftover mashed potatoes and the other being traditional stuffing!! Both of these dishes ended up not only being absolutely delicious, but also made us feel like we were eating an entirely different meal. We hope you enjoy both of these recipes and are able to try them out after the holidays this year!
Leftover Mashed Potato Waffle Recipe
Ingredients (serving size – 2 waffles):
- ¼ cup of all-purpose flour
- 2 cups of Mash Potatoes
- 2 large eggs
- ¼ tsp of Salt (pinch)
- ¼ tsp of Black Pepper (pinch)
- ¼ cup of milk
(You can add a tablespoon of minced garlic but we left it out because I am breastfeeding and avoiding garlic and onions.)
Combined all the above ingredients in a large bowl. We have a Belgian waffle maker so all we had to do was spray some PAM on the irons and get to making waffles! We added sour cream and leftover cranberries (you can use applesauce as well) as the toppings for the waffles and DUG IN!
Leftover Stuffing Waffle Recipe
Ingredients (serving size – 2 waffles):
- ¼ cup of all-purpose flour
- 2 cups of leftover stuffing
- 2 large eggs
- ¼ tsp of salt (pinch)
- ¼ tsp of black pepper (pinch)
- ¼ cup of milk
Just as before, we combined all the above ingredients in a large bowl. Using our Belgian waffle maker again, we sprayed the irons with PAM on the irons and applied the mix! We added an over easy egg with sharp cheddar cheese as the topping! You can also add leftover gravy to the top if you would prefer a more savory taste! For a sweeter taste, try the cranberries and sour cream that we used on the Mashed Potato waffles!
