This is an easy and delicious chicken stir fry recipe that has become a staple in our household for our weekly menu.  I originally started experimenting with paleo recipes after my second round of Whole 30 and found that this chicken stir fry recipe was not just a perfect dinner, but a great option for meal prepping for the week.

Creating a Whole 30 or Paleo meal means that you are making them with whole ingredients and avoiding processed foods. This chicken stir fry recipe uses very simple ingredients to give your mouth that delicious stir fry taste without added sugars or processed foods.

What are the health benefits to eating Whole 30 or Paleo?

I started my Whole 30 journey in 2013 when my mom introduced the dietary plan to the family. Initially, I saw weight loss, more energy and clarity of mind, but did not completely understand the benefits of Whole 30 until I discovered that I had Hashimoto’s disease in 2019, after many years of health issues and a battle with my doctors.

Once I implemented Whole 30, I started to see a change in my overall health. Along with the weight loss and clarity, I also noticed skin clearing, more energy and most importantly it lowered my thyroid antibodies for my Hashimoto’s disease.

If you are a reader like me and want to learn everything about a program prior to doing it, I highly recommend starting off with this book. I actually completed my first round of Whole 30, without reading this book. However, a couple years later, when I found out I had Hashimoto’s Disease, I decided to deep dive into the intricacies of the program to how see and realize the benefits. This book really broke it down for me and allowed me to learn about ALL the benefits of this elimination diet and ultimately, turn my health around.

Once you’ve learned the fundamentals and completed a round of Whole 30, you’ll notice that it becomes easier to understand and know what to look for when planning for meals.

How to make Whole 30 and Paleo Chicken Stir Fry

What you will need for this recipe is boneless chicken breasts, avocado oil, minced garlic, sweet potatoes, coconut oil, water, asparagus, salt, pepper, onion powder, garlic powder, red pepper and paprika. You will also need two pans, one of them preferably a wok; if you do not have a wok, a Dutch oven could work as well.

Step 1

Cube chicken and season with salt, pepper, paprika, onion powder and garlic powder.

Step 2

In a frying pan sauté the minced garlic in avocado oil and add the chicken, cook thoroughly.

Step 3

While you are cooking the chicken, toss the cubed sweet potatoes in with the coconut oil, salt and pepper. (The coconut oil adds some extra sweetness to your potatoes). In the large wok or Dutch oven start cooking the sweet potatoes. This could take up to 20 minutes – you will know when it is done if you can pierce a fork through the potato.

Step 4

Once your potatoes are cooked through, add the asparagus (mix-in) and cook for 10 minutes.

Step 5

Finally, once the chicken is done and potatoes and asparagus are mixed, add in the chicken. If you want to add some spice, sprinkle with red pepper. The red pepper with the coconut oil and sweet potatoes gives it that sweet and spicy kick! YUM!

Ingredients

  • 2 lbs of boneless chicken breasts

  • 2 tbsp of avocado oil

  • 1 tbsp of minced garlic

  • 2 large sweet potatoes

  • 1/3 cup of coconut oil

  • 1 lbs of asparagus

  • 2 tsp salt

  • 2 tsp pepper

  • 1 tbsp onion powder

  • 2 tbsp garlic powder

  • 1 tsp of crushed red pepper (optional)

  • 1 tsp paprika

Directions

  • Cube chicken and season with salt, pepper, paprika, onion powder and garlic powder.
  • In a frying pan, saute the minced garlic in avocado oil and add the chicken, cook thoroughly. (Takes between 20 – 30 minutes, temperature for chicken should be 165)
  • While you are cooking the chicken, toss the cubed sweet potatoes in with the coconut oil (melted), salt and pepper. In the large wok or dutch oven start cooking the sweet potatoes. This could take up to 20 minutes – you will know it is done when you can pierce a fork through the potato.
  • Once your potatoes are cooked through, add asparagus (mix-in) and cook for 10 minutes.
