Blueberry Lemon Waffle Recipe

Anyone who knows me knows that I LOVE waffles; in fact a Belgian Waffle Iron was the first thing that I registered for on our wedding registry. Since receiving it, I have experimented with many different recipes. So, in honor of International Waffle Day, I am going to be sharing one of my favorite and DELICIOUS waffle recipes from Sur La Table.

While browsing a local Sur La Table store trying to get my Son to nap in his stroller, I strolled by their cookbook and food section. My eyes immediately went to the waffle and pancake mix. Knowing that this International Holiday of Deliciousness was coming up, I thought it would be fitting to “treat myself” to a mix and feature it on LuvAshland.com.  In this particular Sur La Table, there were 5 different mixes to choose from: chocolate chip, apple cinnamon, blueberry lemon, buttermilk and gluten free; all very hard to choose from.

Since we are now finally in the season of Spring, I ended up selecting the blueberry lemon waffle mix, which I thought was fitting. Sur La Table claims that this is a bright and lovely spring flavor of blueberry and lemon that come together for delicious fluffy pancakes and WAFFLES – Particularly great for breakfast OR anytime snacking! I am here to tell you that this claim, is 100% the truth. I made these waffles for my family, who were NOT hungry and didn’t even want to try it…. they ended up fighting for the last bite of them. I even purchased them with the Sur La Table syrup, which was not too sweet and perfect to drizzle on top of the waffles. I have linked here where you can purchase this mix, and don’t worry if you do not have a waffle maker, you can also make these babies into pancakes.

Sur La Table Blueberry Lemon Waffle Mix

What you will need:

Directions:

Heat waffle iron. In a medium bowl, whisk together 1 cup milk, a lightly beaten egg, milk and oil until just combined. Add additional milk if batter is too thick. Don’t over mix; batter should have small lumps. Brush waffle iron with vegetable oil (or non-stick spray). Pour ¼ cup onto iron. Cook according to waffle iron instructions and remove when dark golden brown. Makes 4-6 regular square waffles or 2 large Belgian Waffles.

We topped ours with butter, powdered sugar, the Sur La Table syrup, whipped cream and fresh blueberries.

These were the perfect combination of sweet and tangy and the perfect treat for a beautiful Spring Day! Hope you enjoy!
