Recently, I created my churro keto donuts which ended up being one of my family’s favorites! Since it is fall and the flavor of pumpkin is on everyone’s mind, I thought putting a little twist on my keto donut recipe would be fun and, more importantly, delicious. I also thought it might be fun to experiment with a keto donut glaze to drizzle on top of our pumpkin keto donuts.

I don’t know about you, but when fall comes knocking on my door I want to fill my home with everything pumpkin. From my coffee to my decor, I really like to go all out with that pumpkin flavor to celebrate the season. That is why this pumpkin recipe has easily become one of my favorites and it is super easy to make!

After baking your donuts and they have cooled enough to remove them from the molds, placing them on a cooling rack for glazing or sugaring makes it so easy! It also is great for photos, if you like sharing your food masterpieces. Check out the latest prices here.

Having a pastry brush on hand is always great for many different recipes. After baking these donuts, you can use a pastry brush to coat the glaze on top of the donuts. The other option would be just to dip the donuts into the glaze. Check out the latest prices here.

How to make Pumpkin Keto Donuts

What you will need for this recipe is almond flour, monk fruit (some to be baked into the donut and some for the donut glaze), baking powder, cinnamon, salt, butter, almond milk, pumpkin baby food, pumpkin spice, heavy cream, vanilla extract, eggs and almond extract.

Step 1

First start with preheating your oven to 350 degrees. Take your large bowl and mix together all of your dry ingredients (almond flour, monk fruit, baking powder, salt cinnamon and pumpkin spice.) In a separate bowl, mix together all of your wet ingredients (melted butter, almond milk, vanilla extract, eggs, pumpkin baby food and almond extract.) Once both mixtures are mixed, combine both and mix.

Step 2

Once both mixtures are combined, the next step will be to fill your donut molds. Before filling the molds you will need to spray/grease the molds. I normally use coconut oil spray, but you can use whatever you have to grease the molds. Fill all the molds. This recipe yields 12 donuts, so if you have a 6-donut mold, you will need to bake them in two batches.

Step 3

Once your donut molds are filled, you will want to place the mold on a baking sheet and place in your pre-heated oven for 30 minutes. (Note – I normally check them at 20 minutes. You want them to look golden brown when done.)

Step 4

While your donuts are baking, you will want to make your donut glaze. Combine the vanilla, pumpkin spice, cinnamon, monk fruit and heavy cream in a small bowl and mix. Microwave from 10-20 seconds to get a thin consistency.

Step 5

Once your donuts are done baking, make sure you pull out of the oven and let them cool completely. (Normally 10-15 minutes will do it.) Once cooled, start gently popping each donut out of their molds and place on your cooling rack. From there, you are going to want to start glazing the donuts. Start with dipping each donut gently into the glaze as desired. (Note – you can also use a brush to brush the glaze if preferred). Repeat until all the donuts are coated.

  • 1 jar of pumpkin baby food

Notes

  • Every oven is different – so I would check your donuts around the 20 minute mark. You will know they are done when they are a golden brown.
  • When you are glazing your donuts you can either dip the donuts in the glaze or use a brush.
