Shrink your Carbon Footprint with Plant-Based Recipes and Pure Farmland

After becoming parents, my Husband and I have become more conscious about our choices. Choices around what we bring into our home, what we feed ourselves and our children as well as environmentally conscious choices. With that, we have discussed options about slowly integrating a plant-based lifestyle into our lives. Throughout the last couple months, we have been able to research not just the health benefits, but also the environmental benefits that come with adopting this plant-based life even for a portion of the time.

Of course, within that research we also took time to look up companies that held the same values as us and were taking action for consumers and global health. When I heard about the company Pure Farmland and their belief in minimizing their impact and looking for new ways to be environmentally friendly, I was thrilled.

Pure Farmland works towards lowering their impact and becoming more environmentally friendly in two ways:

Pure Farmland protects one square foot of farmland with every unit purchased. In doing this through their ongoing partnership with American Farmland Trust, they donate the cost of protecting one square foot for every unit of Pure Farmland product sold. American Farmland Trust is the only national conservation organization dedicated to protecting farmland, promoting environmentally sound farming practices, and keeping farmers on the land.

Pure Farmland products come in recycled trays. Their product trays are made with more than 50% recycled material, so you know that you are making an eco-conscious choice when you pick Pure Farmland Plant-Based Protein. On top of that, they ship their products to stores in corrugated boxes made from 100% recycled materials.

Wanting to make this planet a better planet for my children is extremely important to my Husband and I and we consciously try to take steps to make choices that have a ripple effect of good throughout our society and our environment in any way we can. Part of that, is cooking plant-based for our family which, as research has shown, can lower our carbon footprint by simply changing our diets. Even if that change is eating just ONE plant-based meal a day, you can make a difference.

So, as part of this partnership and discovery with Pure Farmland, our family came up with two delicious recipes where we incorporated two different Pure Farmland products. We hope you and enjoy and as always, if you try it, please let us know what you thought!

Pure Farmland Breakfast Patties Bowl

Serves 2

Ingredients:

  • 1 pack of Pure Farmland Breakfast Patties
  • Sweet Potato Hash
  • 1 Avocado
  • 2 Boiled egg – Jammy or Hard-Boiled
  • Garnish – Parsley

Directions:

  • Follow my Sweet Potato Hash Recipe and create the base for your dish.
  • Boil eggs to liking – place in cold bath, peel and set aside.
  • While the sweet potato hash is cooking in the oven – start grilling the Pure Farmland Breakfast Patties.
  • Once the patties and hash are finished, placed hash in bowls, cut and add boiled egg, avocado and garnish with parsley.
  • Enjoy!

Notes: My Husband and I both loved the breakfast patties and he said he would gladly use them as a meat replacement.

Pure Farmland Plant Based Meatballs Zucchini Noodle Caprese

Serves 4

Ingredients:

  • 1 Pack of Pure Farmland Plant Based Meatballs
  • 2 bags of frozen zucchini noodles
  • Small jar of pesto sauce (8-12 oz.)
  • Mozzarella (this can be dairy-free if desired)
  • 6 cherry tomatoes
  • Parmesan (this can be dairy-free if desired)
  • Salt & pepper to taste

Directions:

  • In a skillet, place frozen zucchini noodles on medium heat and cover for 4 minutes.
  • While the zucchini noodles are cooking, start baking the meatballs. Follow directions on Pure Farmland packaging.
  • After the zucchini noodles start to defrost, season with salt and pepper to liking and cook thoroughly.
  • Once cooked, bring heat down to low and add in pesto sauce. Mix thoroughly.
  • Cut up mozzarella, and tomatoes. Place the pesto zucchini noodles in base of the bowl and sprinkle in mozzarella and tomatoes.
  • Once the meatballs are finished cooking, add to bowl and sprinkle with parmesan to finish.
  • Enjoy!

Notes: We both enjoyed the meatballs; my Husband did think they would be good with rice as well.
