Whole 30 Kale Chips

When I was pregnant, I craved Kale. I know that this may seem odd, but it is the truth. There was this one health-focused restaurant near my old job that had this delicious kale salad that I literally craved every single day. One of the days, I made my Husband take me there for lunch as well as for dinner and even bought an extra salad to have for lunch the next day. I have read some articles about how smart a woman’s body is when pregnant and when we crave something a lot of times it is our body telling us what we are missing.  On a side note, my Brother called me out during my pregnancy and asked what vitamin are you missing from your taco bell craving? So, as you can expect, I cannot explain that, but back to my original point. Kale is a great source of vitamins; not only is it an antioxidant, it also contains Vitamin C, K, B2, B3, A & E. Finally, it is a great source of fiber, protein and minerals. If you haven’t guessed it yet, I am definitely one of those people who jumped on the Kale train with every other Southern Californian and have been obsessed with it since. That said, below I am sharing an easy go-to recipe to eat Kale in one of my favorite ways to eat Kale, as chips! What is so yummy about this recipe, is dipping it in some Whole 30 or Paleo-approved ranch. Enjoy this recipe!

Whole 30 Kale Chip Recipes

Servings: 2 People

Time: 10 Minutes

Ingredients:

Air Fryer Directions:

(Note that all air fryers are different and you should be following the instructions of your air fryer. This is the air fryer that I use.)

  • Wash all your Kale and place in large mixing bowl.
  • Preheat your air fryer to 370 degrees for 3 minutes.
  • In the meantime, add the coconut aminos, olive oil and salt and pepper to the mixing bowl with the kale. Toss to ensure all the pieces are covered.
  • Once air fryer is preheated, add in all the kale mixture.
  • Cook for 6 minutes, checking and tossing the kale halfway through. (I always near the end keep checking the Kale to make sure that it doesn’t burn. You really are looking for it to have that crispy chip texture.)
  • Once finished and cooked to liking, pour kale into serving bowl and add the Everything But The Bagel Seasoning. Serve with a side of Whole 30 approved Ranch!
  • Enjoy!

Oven Directions:

  • Wash all your Kale and place in large mixing bowl.
  • Preheat the oven to 350 degrees.
  • In the meantime, add the coconut aminos, olive oil and salt and pepper to the mixing bowl with the kale. Toss to ensure all the pieces are covered.
  • Place the kale on a parchment paper lined baking sheet in one single layer.
  • Bake for 15-20 minutes. (Depending on your oven.) At 10 minutes, I check the chips and toss them around with a spatula.
  • Place baked kale in serving bowl and add Everything but the Bagel Seasoning.
  • Serve with Whole 30 approved Ranch!
  • Enjoy!
