Whole 30 Chicken with Pesto Zucchini Noodles

I made it my first because I LOVE pesto and I thought it would get me pumped to do all the other recipes. It did! After I finished this recipe and served it to my husband he stated: “If you can make all your Whole 30 recipes like this one, I could stay on Whole 30 for the rest of my life!” Kind of extreme, but I have to admit my favorite things about cooking for him are his reactions!! Whole 30 Chicken with Pesto Zucchini Noodles

Pesto Recipe:

  • Ingredients
    • 2 cups of pine nuts
    • 5 cups of basil leaves
    • 1 cup of spinach leaves
    • 2 tsp of minced garlic
    • 1 cup of extra virgin olive oil
    • 1 tsp of pepper to taste
    • ½ tsp of salt to taste (I add a little bit more, because I LOVE salty, but it is up to you)
  • Directions:
    • Toss all ingredients in a blender or food processer and mix. I like my pesto a little thicker, so I don’t mix it too much.
    • What I love about the pesto recipe is that you can really make it your own by adding or taking away what you want or don’t want in the recipe.
    • You can double the recipe and place it in a mason jar and use this sauce for many recipes throughout the week.
    • ENJOY!

Zucchini Noodle Recipes:

  • Ingredients:
    • 5 large zucchinis (OR a bag of zucchini noodles)
    • Ghee (to coat the pan)
    • Salt and pepper to taste
  • Directions:
    • If you have a spiralizer like me, you will need to first make all the zucchini into noodles.
    • Coat a pan with ghee and throw the noodles in. Toss the noodles for 5-10 minutes on medium heat, or until noodles are soft. Salt and pepper to taste.
    • I normally throw the noodles in a glass-baking dish and then toss them with the pesto.


  • Ingredients:
    • 4 boneless chicken breasts
    • ½ tbsp of salt
    • ½ tbsp of pepper
    • ½ tbsp of onion powder
    • Ghee
  • Directions:
    • Mix the salt, pepper and onion powder all together and pour on a small plate.
    • Season each chicken breast.
    • Coat a pan with Ghee and place each chicken breast in med heat pan. (If your pan is smaller, like mine, then do two chicken breasts at a time.)
    • Cook chicken 5-7 minutes on each side or until completely cooked.
    • Plate your chicken on top of the pesto zucchini noodles and ENJOY!
