A couple years ago, my Mom approached our family and asked us if we wanted to go on the Whole 30 with her. Our first reaction was: “What on earth is the Whole 30?” After she explained the program in detail, we shrugged and dismissed the idea of doing a “family Whole 30.” We all immediately judged it as just another fad diet that was like all the others out there. Being the determined woman that my Mom is, she ignored us and prepped herself for the 30 days. In the beginning, my Mom struggled, but after 15 days into it, she almost became a different person. She had an abundant amount of energy and was in a PHENOMENAL mood. Her hair was shiny, her skin was gorgeous, eyes were super white and overall she just looked refreshed and renewed. Noticing the difference, I commented on how she looked and she swore that it was all because of the Whole 30. Rethinking my previous stance, I realized that I may have misjudged this program and asked if I could jump on with her and start my Whole 30 the next day. My whole Family, including my husband decided to start it on the same day and from there, the rest was history. After the 15 days, we all felt like a million bucks. We had so much energy and overall felt healthy and new! I became obsessed and bought every book that the founder wrote, which you can find here:
Whole30 books I recommend:
Not only had I lost 10 lbs at the end of the first thirty days on Whole 30 but also and more importantly, it had changed my mindset; not just my relationship with food, but my confidence as a woman and how I felt in my own skin.
Since then, I have incorporated Whole 30 into my life. I do Whole 30 from time to time to recalibrate my body and do an overall reset. This has inspired me to do a series on this blog. I think a lot of people want to do something different to better themselves but when looking at the Whole 30, at first glance, may think it is a bit too tough and the food may not taste good. I wanted to share 5 of my favorite Whole 30 chicken recipes to change that perception.
I chose chicken, because like many Moms out there, I am on a budget and it is a LOT cheaper to buy chicken in bulk at Sam’s Club or Costco and incorporate it all into 5 different recipes for the week! (SEE, I’m not only encouraging you to do the Whole 30, I’m also protecting your wallet!!)
The below 5 recipes is what I will be presenting in the series in the next 5 days, starting with the first: Whole 30 Chicken with Pesto Zucchini Noodles.
5 Whole 30 Chicken Recipes in 5 Days Series
- Whole 30 Chicken with Pesto Zucchini Noodles
- Whole 30 Stir Fry
- Whole 30 BLT & Avocado Chicken Salad
- Whole 30 Chicken and Mediterranean-style Cauliflower
- Whole 30 Chicken Soup (That will make you NOT miss the noodles)
I welcome you all on this series/journey with me and would LOVE to hear your thoughts regarding these recipes and Whole 30 in general. Let me know if you customize any of them to your liking or even have a recipe that you think I would like!
