Snowball Cookie Recipe

New Years Resolutions are upon us; luckily we have a little time left before we start worrying about these resolutions and counting the calories. I love to bake and have always believed that cooking and baking are therapeutic ways to ignite the Martha Stewart within us! It also gives us a break from the day-to-day stresses of our lives!

This year, I wanted to try something new in the kitchen and decided to look at traditional holiday cookie recipes. I do not necessarily have a “sweet-tooth” when it comes to food and I have inherited many recipe books from my Mom, Grandma and Great Aunt to skim through. I decided to dig deep and look for a holiday cookie recipe that was both sweet and savory, satisfying both ends of the spectrum; this led me to choose Snow Ball Cookies!

Recipe

  • Ingredients:
    • 2 sticks of butter
    • 6 tablespoons of sugar
    • 2 teaspoons of vanilla extract
    • ½ teaspoon of salt
    • 2 cups of flour
    • 2 ½ cups of pecans (finely chopped)
    • 2 cups of powdered sugar
  • Steps:
    • Melt butter.
    • Mix butter and sugar together.
    • Mix in vanilla.
    • Mix in salt.
    • Slowly add flour.
    • Mix in nuts.
    • Wrap dough in plastic wrap and refrigerate for 1 hour.
    • Preheat oven to 350 degrees.
    • Take dough out of fridge and make 1-inch balls.
    • Place balls 1-inch apart on parchment lined baking sheet.
    • Bake cookies for 15 minutes.
    • Cool cookies for 3 minutes.
    • Roll cookies in powdered sugar.
    • Let cookies set for 15 minutes.
    • Roll cookies again in powdered sugar.
    • Enjoy!

I was very happy with the final results! Not only were these cookies easy to make and pretty to look at, they also tasted amazing and were affordable to make as well! I was proud enough of these cookies to wrap and give away as Christmas gifts for people at work, neighbors and family. I may try making them into little snowmen next year for fun!
